Mandarin Orange Refrigerator Cake

An easy, make-ahead dessert with the delicate flavor of mandarin oranges

Ingredients

Instructions

  1. Drain mandarin oranges into a colander or strainer. Allow to thoroughly drain.
  2. Place heavy cream in a large bowl. Add confectioner's sugar and vanilla extract. Using an electric mixer, beat until medium peaks form.
  3. Place instant pudding mix and milk in a separate large bowl. Whisk or blend for 2 minutes until pudding begins to thicken.
  4. Add 2/3 of the whipped cream to the pudding mix. Fold in gently until combined.
  5. Place a single layer of graham crackers or vanilla wafers in the bottom of a 9x9-inch casserole dish. Spoon half of the pudding mixture over the crackers/cookies; then, spread into an even layer.
  6. Scatter half of the drained mandarin orange slices over the pudding. [Save 8 slices for a garnish if desired.]
  7. Repeat with another layer of crackers/cookies, pudding mixture and orange slices.
  8. Finish with a layer of crackers/cookies. Then, top with the remaining 1/3 whipped cream. Garnish with reserved mandarin orange slices if desired.
  9. Cover tightly and place in refrigerator for 8 hours before serving.
