Ingredients
Instructions
- Drain mandarin oranges into a colander or strainer. Allow to thoroughly drain.
- Place heavy cream in a large bowl. Add confectioner's sugar and vanilla extract. Using an electric mixer, beat until medium peaks form.
- Place instant pudding mix and milk in a separate large bowl. Whisk or blend for 2 minutes until pudding begins to thicken.
- Add 2/3 of the whipped cream to the pudding mix. Fold in gently until combined.
- Place a single layer of graham crackers or vanilla wafers in the bottom of a 9x9-inch casserole dish. Spoon half of the pudding mixture over the crackers/cookies; then, spread into an even layer.
- Scatter half of the drained mandarin orange slices over the pudding. [Save 8 slices for a garnish if desired.]
- Repeat with another layer of crackers/cookies, pudding mixture and orange slices.
- Finish with a layer of crackers/cookies. Then, top with the remaining 1/3 whipped cream. Garnish with reserved mandarin orange slices if desired.
- Cover tightly and place in refrigerator for 8 hours before serving.
