Two-Minute Cake

At the time this recipe appeared in the March 1945 Woman's Day magazine, the cost of this cake was "14 cents plus 2 egg whites." The batter comes together about as fast as a boxed cake mix! The original recipe is given here, only with measurement conversions included.

Ingredients

• 1/3 cup (70g) softened vegetable shortening
• 1 cup (235g) sugar
• 2 egg whites
• 1 teaspoon (5ml) vanilla
• 1/2 teaspoon (4g) salt
• 1-3/4 cups (288g) sifted cake flour
• 2 teaspoons (12g) baking powder
• 1/2 cup (115ml) milk

Instructions

1. Put ingredients into bowl in order given, then beat all together vigorously for 2 minutes.
2. Bake in wax paper-lined 9-inch square pan in moderate oven, 375°F, 30 minutes.
