Simple, quick and easy-to-make cookies for tea or coffee. These chewy-crisp cookies are similar to macaroons. They may also be used in trifles or as a crumbly topping.

- Preheat oven to 325°F (163°C).
- Whisk almond flour and sugar together.
- Beat egg whites and extracts together until soft peaks form.
- Fold almond flour mixture into egg white mixture and blend well to form a soft paste.
- Place by tablespoonfuls onto a baking sheet lined with parchment paper or a silicone mat.
- Bake 15-20 minutes until golden brown. Be careful not to overbrown. Allow to cool on baking tray before transferring to a serving dish or airtight container.
