Simple, quick and easy-to-make cookies for tea or coffee. These chewy-crisp cookies are similar to macaroons. They may also be used in trifles or as a crumbly topping.

  1. Preheat oven to 325°F (163°C).
  2. Whisk almond flour and sugar together.
  3. Beat egg whites and extracts together until soft peaks form.
  4. Fold almond flour mixture into egg white mixture and blend well to form a soft paste.
  5. Place by tablespoonfuls onto a baking sheet lined with parchment paper or a silicone mat.
  6. Bake 15-20 minutes until golden brown. Be careful not to overbrown. Allow to cool on baking tray before transferring to a serving dish or airtight container.
