As described in the book Wartime Farm, "Sometimes called 'murkey' this wartime favourite was essentially a stuffing mix shaped like a turkey." The original recipe is given here.

Instructions

  1. Mix together the sausagemeat, breadcrumbs, onions, apple, herbs and seasoning, and combine thoroughly.
  2. Form the mixture into a turkey shape upon a lightly greased baking tray, with teh two parsnips forming the legs.
  3. Lay the streaky bacon over the "bird" to help hold everything in place--this will also help to baste the murkey as it cooks.
  4. Roast in a medium oven for about an hour.
