Honey Mincemeat Cookies

These bar cookies are filled with mincemeat for an easy treat. They are good topped with or crumbled into ice cream.

Ingredients

Instructions

  1. Combine the honey and shortening, and heat until the latter melts. Then cool until tepid.
  2. Sift together the dry ingredients, add the flavoring, and honey mixture, and mix well.
  3. Chill; then, roll into an oblong shape one-eighth inch thick. Cut in halves and fit half into an oiled pan. Cover with a layer of mincemeat, cooked down to a thick paste. Put on the second half of the dough, press lightly together, and sprinkle with chopped walnuts.
  4. Bake 20 minutes in a hot oven 375°F (190°C). Cut in squares and cool before serving.
