Beets in Orange Sauce

A very quick and easy recipe using simple ingredients, that adds up to a highly nutritious--and tasty--side dish.

Ingredients

• 1 tablespoon (14g) butter
• 1 tablespoon (9g) flour
• 1/4 cup (60ml) liquid off beets
• 1/2 cup (120ml) orange juice
• 1 teaspoon grated orange rind
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 1 teaspoon sugar
• 1/4 cup (60ml) Pet Milk [or other evaporated milk]
• 2 cups cooked or canned beets, diced [approx. 1 pound/450 g]

Instructions

1. Melt butter, stir in the flour and slowly add the beet liquid.
2. Add orange juice and rind, salt, pepper and sugar. Cook stirring constantly, until thick and smooth.
3. Scald milk. Remove from fire and add slowly the orange juice mixture, stirring constantly.
4. Add hot beets and serve immediately.
